DRY WHITE WINE: 182,000 bottles
Made with premium Bordeaux varieties : Sauvignon Blanc (40%), Sémillon (40%), and Muscadelle (20%). This blend,
based on ancient tradition, is rare in Bordeaux these days.
Traditional winemaking : skin contact (50%), cool fermentation (16/18° C) in vat, and barrel-ageing on the lees
for about 3 weeks, which makes the wine round, smooth, and fruity.
This wine is ideal as an aperitif and with fish, seafood (oysters, mussels), or goat's cheese.
Best enjoyed young (within 2 years of the vintage).

CUVÉE VALENTINE DRY WHITE WINE: 8,000 bottles
This cuvée is named after our granddaughter, Valentine, born in 2000, a fabulous vintage. In fact, we only make this
wine in special years !
A very unusual grape variety, Sauvignon Gris, accounts for 80% of the blend, along with 20% Sémillon.
Cuvée Valentine is fermented in new oak barrels and aged on its lees for about 5 months.
This delicious wine combines both finesse and power. The oak does not overshadow the wine's intrinsic flavour, and
is in complete harmony with the fruit.
Cuvée Valentine is perfect with shellfish (lobster, scampi), fish in a sauce, or smoked salmon.
Original serving suggestion: a very good, ripe Camembert or Coulommiers.
This white wine improves with age (2-6 years).

CUVÉE VALENTINE ROUGE : 12,000 bottles
This cuvée is only made in years worthy of our granddaughter, Valentine, who gave her name to this wine in 2000,
an outstanding vintage.
The grapes come from choice vineyard plots, and the grapes are rigorously sorted during the harvest.
Ageing is done in new oak barrels for 12 months. Great care is taken so that the oak does not overpower the wine.
Rich, powerful wine with ripe tannin. Starts out with delicate oak and plenty of fruit, going on to reveal a
tremendously long, delicious aftertaste.
Best with game and strong soft-ripened cheeses.
Ageing : enjoyable starting in its fifth year, this wine is delightful for twenty years or more.

BORDEAUX CLAIRET : 20,000 bottles
The end of the Hundred Years' War marked the close of 300 years of English occupation of the Aquitaine region. The
English did a great deal to promote exports of Bordeaux wine to their country, creating a veritable infatuation for "claret".
Modern-day "clairet" is, in fact, a rosé wine made like a red. Ten percent of the juice in vats of red wine is "bled" off
after 24-48 hours of maceration. Clairet is thus more deeply-coloured and full-boded than a more commonplace rosé. The Clairet
appellation applies only to this type of wine made in Bordeaux.
Magnificent, bright, brilliant colour. Cherry bouquet. Very smooth and aromatic on the palate. Best enjoyed at 8-10° C with
grilled meat or oriental food.
Best enjoyed young (2 years).
